Leanne Fernald, Confectioner

So I have to tell you about my latest experimentation.

I make the almond toffee - like 30 pounds of it.

I have lots of crumbs left over when I break it into pieces.

I hate to throw all those crumbs away.

Idea: Why don't I use toffee crumbs in oatmeal cookies?

Mistake: read "vegetable shortening" as "vegetable oil".

The cookies turned out to be wonderful, crispy oatmeal cookies with toffee chunks, chocolate, and walnuts (the left overs from the candy.)

Tiny little cookies take hours to make, but they're great and are just the right size!

Now I'm in the business of making tiny little oatmeal "bites".

Combine a day at the ocean with a visit to the Seaview Manor Bazaar in Seaside, OR, October 24 and 25, 2014.
